Jerusalem artichokes, also known as sunchokes, are a hardy and productive perennial vegetable that thrives in a wide range of soils and climates. They produce an abundance of nutty, crisp tubers that can be eaten raw, roasted, or added to soups and stews. The variety we offer has plump, round tubers, with few knobs (see photos), so they are easy to wash and peel.
Easy to grow with minimal care, Jerusalem artichokes are perfect for low-maintenance or permaculture gardens. Jerusalem artichokes are rich in fiber and inulin, a prebiotic that supports gut health.
Jerusalem artichokes' are closely related to sunflowers and their yellow flowers and tall stalks add beauty to the garden and can serve as a natural windbreak, as the plants can reach 7 feet tall in 3 months.
With their versatility in the kitchen and resilience in the garden, Jerusalem artichokes are an excellent addition to any edible landscape. They are a set-it-and-forget-it crop.
As they spread long distances underground and can be hard to eradicate, we recommend growing them in pots for easy harvest and as a way to contain them, or selecting a permanent spot in your garden.
