The Globe Artichoke is an edible, culinary variety, cultivated for over 500 years. Artichokes are known to have the highest anti-oxidant levels of any vegetable.
The artichokes we're used to eating are the plant's flower buds, and these fast growing plants can produce 6-10 flowers per plant. They are an herbaceous perennial, meaning they will die back to the ground every year, to regrow the following spring.
If you miss picking an artichoke flower bud, let it go to flower. The tall, purple tufts are a favourite of pollinators.
