There are many benefits to using mulch in your garden, but one of the biggest is to protect plants and soil during the coldest months of the year.
Freezing temperatures can cause soil to heave, as the water within it freezes and pushes upward and outward. This action can break plant roots and hurt soil structure, as well as impact beneficial soil microbes.
This video, from our food garden in January, is a great visual example of how big a difference mulching makes in the winter garden!
